Add this highly nutritious plant to your edible garden as this ancient grain is not only an excellent food source, it’s high in protein and vitamins. The leaves are used like spinach, eaten fresh in salads, soups, sauces, curries or used in stir-frys and stews. Although this is a staple in many Asian countries, it is not as commonly used in America but should be as it is very rich in vitamins.
Red leaf amaranth is highly ornamental as well sporting beautiful deep rich burgundy-red leaves from stem to seed head. Plants grow upwards of 10 feet in height so harvest leaves regularly. If permitted to form seed heads, plants will become a nuisance as the seeds are small and spread in the most unsuspecting areas.
