Amaranth is an ancient grain that is a rarity in the states. Used more as an ornamental in the US, it is actually a very popular grain often harvested for its tasty green leaves. It is eaten all over the world and is very easy to grow. Plants become tall and bushy growing to nearly 8 feet, if given an opportunity. In order to grow the plants successfully, it does require warmth and plants grown in the cold will quickly become stunted. This is the plant to grow if you want to make your own Jamaican Callaloo.
